hello, everybody welcome to maggie's kitchen playground ep. 2 today, i am gonna teach everybody a very simple dish tomato scrambled eggs i learned it from my mom.

how to make scrambled eggs, i know everybody usually cooks this dish at home. or very often people get the dish at restaurants in taiwan. but, the way that everyone cooks,


usually, adds ketchup and a lot of sugar. but my mom and i don't like to eat the tomato scrambled eggs too sweet and also, too much ketchup flavor so, i am going to teach everybody "none ketchup" version's of tomato scrambled eggs i made this dish for a lot of my foreigner friends and they love it a lot. next time, if you have foreigner friends visiting you you should definitely make this dish they will think you are an awesome chef.


if you want to learn it continue to watch this video. the ingredients that you need for this dish are very easy all you need are eggs, tomatoes and scallion smash the white part of scallion it will release flavor more easily. cut it into 3cm pieces now, cut the tomatoes


be careful, don't hurt your hand. if you prefer to eat bigger slices of tomatoes you can cut it like this size but i prefer to eat small pieces so i cut it to the size that you can eat in one bite. crack 3 eggs add a pinch of salt let the eggs have a little bit flavor stir it


now it is ready to cook. preheat the pan add a little bit of oil i will cook scrambled eggs first and then cook the tomatoes later to keep the scrambled eggs's shape more complete the most important thing is you don't have to wash the pan while you cook when the eggs are like this


still a little bit runny you should remove them onto a plate don't worry that the eggs are still a little bit runny we will put them back to cook later now, saute your scallion here i will add a little bit more oil cause lycopene needs oil to extract it out when you smell scallion fragrance you can take it out


add tomatoes saute it when you the oil becomes red we can start adding some spice in all you need to add is a little pinch of salt sugar and soy sauce the reason i add soy sauce here


is to let the tomato sauce look more colorful so, don't add too much add some water to cook it everybody's soy sauce has a different saltiness you definitely, have to taste the flavor and adjust by yourself the flavor is supposed to taste sour and salty now, you can put the scramble eggs back in to cook stir it and mix it for 30 secs then you can turn off the oven
